Jamaican Red Beans & Rice

Ingredients
2 cups (1.5 16-oz cans) of red beans2 stalks celery, chopped (optional).25 cups carrot, chopped (optional)1 large onion, chopped1/2 cup green pepper, chopped (optional)1 tsp olive oil1/4 tsp thyme3/4 cup vanilla soy milk1.5 cups cooked brown rice1/4 tsp garlicsalt & pepper
Directions
Heat oil in skillet. Add onion, (bell pepper, carrot) & saute over med-low heat until translucent. Add garlic (& celery) & continue to saute until onion is golden.



Add rice, beans, soy milk, and thyme. Bring to simmer, ten cover and cook over low heat until most of milk is absorbed, about 15 minutes. The mixture should be moist, but not liquidy. Season with salt and pepper and serve.

Makes 8 1/2-cup servings.

    My family really enjoyed this meal. I used light coconut milk instead of soy milk and I think that made it even tastier. We added some creole spice, because it's a tiny bit bland, and that made it perfect. - 1/28/09
