Laura's Shrimp & Rice with a Kick

1 Tsp Oil1 Red Onion, chopped1 Red Bell Pepper, chopped1 Green Bell Pepper, chopped4 cloves garlic, minced1/2 Cup Water1/2 Cup White Wine1 Cup Chicken BrothWhite Rice, medium grain1 lb. shrimp, peeled & deveined1 1/2 tsp Red Pepper - or more to tasteSalt to taste
Heat oil until shines, add chopped Red Onion, Red and Green Bell Peppers, cook until tender and translucent, stir in garlic.
Stir in white rice, add salt to taste, stir in white wine, water and chicken broth and bring to boil for about 3 minutes.
Turn heat to low and cover. Cook for approximately 20 minutes. Clean and devein shrimp and cut into bite size pieces. Once rice has cooked 20 minutes, add shrimp for another 5 minutes.
Four servings. Really good with a little pepper jack cheese sprinkled on top
