Raw Vegan Chocolate Chip Cookie Dough

2/3 c raw cashews1/3 c really raw oats3 Tbsp Agave1 Tsp Vanilla Extract1/2 tsp maple extract1/4 c unsweetened Carob Chips
In food processor or strong blender, blend cashews and oats together to make a flour.
Add agave and extracts (and if you want to add some cinnamon or other spices I would suggest adding them here :) Blend again until the dough begins to form a ball.
Add in the chips and either pulse quickly or stir them in by hand. (hint: you can also make your own raw chips to keep them truly raw. Just take 2 Tbsp Raw Cocoa Powder and add 1 Tbsp Agave, whisk together. Spread into a thin layer on wax or parchment paper and freeze. Take frozen chocolate off parchment and crumble the shreds into the mixture as your chips)
If your dough is too sticky to work with at this point, refrigerate for half an hour or so. Then roll into about 17 cookie-dough balls and voila!
Optional: roll in carob powder, coconut shreds, or sub raisins for chocolate chips and add some cinnamon!
