* Taro, 226 grams (remove) * *Taro Leaves, 0.5 cup (remove) * brown rice (1 cup cooked), 1 serving (remove) * Onions, raw, 1 medium (2-1/2" dia) (remove) * Yellow Sweet Corn, Frozen, 0.25 cup kernels (remove) * Jalapeno Peppers, 2 pepper (remove) * Garlic, 3 cloves (remove) * Oats, 1 cup (remove) * Sunflower Seeds, without salt, 1 cup, hulled (remove) * Olive Oil, 2 tbsp (remove) * *Himalayan Pink Salt, 1 tsp (remove) * Pepper, black, 0.5 tbsp (remove) * *Cumin seed, 1 tbsp (remove) * Turmeric, ground, 1 tbsp (remove) * Chili powder, 1 tbsp (remove) * Cilantro, raw, 2 tbsp (remove) * Carrots, raw, 1 large (7-1/4" to 8-1/2" long) (remove)
cook and mash taro root (microwave, covered with plastic wrap, 4-5 min), set aside.
cook diced onion, minced garlic, minced jalapeno, and minced ginger in 1 tbs olive oil over low heat until soft and fragrant.
place oats and sunflower seeds in food processor, process until the mix becomes a smooth flour.
combine taro, 1/2 cup flour mixture, sliced taro leaves and cilantro, carrots, corn. add onion/garlic mixture (when cool enough). add spices. mix thoroughly.
form little balls for the patties. dredge in remaining flour. i put them between two sheets of parchment paper bc i knew id be freezing some. this is a really easy way to get the right shape too.
you can either fry, bake or grill these until nicely browned!
