Buffalo Balls

1 lb ground buffalo2 links of hot Italian sausage¼ cup grated yellow onion1 cup bread crumbs1 large egg beaten1 table spoon fresh:Oregano, thyme, basil2 large garlic cloves put through a garlic press
Preheat oven to 350 . Cover a large jelly roll pan (basically a cookie sheet with edges, so your meat balls don't roll off) with tin foil and spray with cooking spray.
Mix all the ingredients together one at a time with your hands, this is the fun part! When thoroughly mixed use a cookie scoop size 70 to scoop up meat. You can also eye ball this part but make sure your balls are the same size so that you cook them evenly. Roll the meat in your hands to form the ball and place in rows 1/2'" apart on cookie sheet. Bake in the oven for 8-9 minutes check for doneness.
Tips:
For spicy Buffalo Balls add ¼ cup or so buffalo wing sauce, or your favorite hot sauce to the mixture. I like the Dave's Gourmet Garlic Hot Sauce.
When I make this I don't add hot sauce but instead when meatballs are done cooking I mix them into Kristi's Marinara Sauce. Now they are perfect on pasta, or make meatball subs by putting meatballs marinara sauce on toasted bread and melt provolone cheese on top, yum!
