Palak Chana (Spinach with Chickpeas)

1 2/3 cups chickpeas; drained and washed1 Tbsp olive oil1/2 cup onion; chopped finely2 roma tomatoes; diced4 cups chopped spinach2 Tbsp minced garlic1/4 tsp ground ginger2 Tbsp diced green chillis1/2 tsp tumeric powder2 tsp coriander2 tsp cumin powder1/2 tsp garam masala1/2 tsp salt
Fry the onions in the heated oil, until golden brown, add the tomatoes, garlic, ginger and chillis, cook for about 5-8 minutes until it is blended together. Add the tumeric, coriander and cumin powders, stir and cook for about 3 minutes.
Add the spinach, stir and cook for a further 8 minutes, until it is limp. Add the chickpeas, mix and cook for a further 10 minutes. Add the garam masala and mix. Serve hot.
