Slow cooker veggie Gumbo

Olive Oil, 1 tbsp Onions, raw, 1 large choppedCelery, raw, 1 stalk, choppedPeppers, red, bell, seeded and choppedGarlic, 1 clove mincedVeggie broth 3 cupsVegetable Juice Cocktail 2 cups (Or tomato juice) low sodiumCanned Tomatoes, 1 can choppedZucchini, 2 medium, halved and sliced Thyme, dried, 1 tspHot sauce - or tabasco, 1 tsp Liquid Smoke Marinade, 1 tspSalt, to tastePepper, black, to tasteFile powder if you can get it, 1tsp
heat oil in pan, add onion, celery, pepper garlic and cover, cook till soft around 5 minutes.
Transfer to 4-6 quart slowcooker add stock, tomato juice, tomatoes, zucchini, file powder and thyme. Season and cover, cook in slow cooker for 8 hours on low.
Just before serving stir in hot sauce, and liquid smoke. Adjust seasoning to taste. Serve over rice.
