Root Soup

1 lb. Carrots1 lb. Parsnips1 lb. Turnips1 lb. Sweet potatoes3 lb. Red skin potatoes8 c. Vegetable broth1 c. Water (enough to cover)2 tbsp Olive Oil
Peel & chop vegetables. Heat olive oil in the bottom of a stock pot and add onion & garlic powder (or actual garlic and onion, as you prefer) and add carrots and sweet potatoes to quickly stir fry them and seal in the sweetness.
Add vegetable broth and other chopped veggies, and if necessary, water to cover. Add preferred herbs, such as dill, parsley, bay leaf, etc.
Allow to simmer for at least 2 hours, preferably longer (the longer it simmers, the better it tastes). Once well-cooked, this is a very sweet soup.
Makes 8 large servings.
