Raspberry Muffins

Ingredients
1 cup white self-raising flour1/4 cup wholemeal self-raising flour1/2 tsp cinnamon1/2 cup sugar6 weetbix crushed1 1/2 cups frozen raspberries1 egg3 tbsp rice bran oil1 cup rice/oat/soy milk
Directions
1. Sift flours, cinnamon and sugar into large bowl.

2. Stir through Weetbix and raspberries.

3. Combine egg, rice bran oil and milk. Add liquid ingredients to dry ingredients, stirring gently with a spoon until just combined.

4. Spoon mixture into lightly greased muffin tins.

5. Bake at 180 C for 30 minutes.

Makes 12 small/medium muffins.
