Introduction

Ingredients

    1 Cup Sugar
    1 Large Egg, Slightly Beaten
    1 Teaspoon Baking Soda
    1 Cup Peanut Butter (Smooth)

Directions

Preheat oven to 350 degrees
Combine all ingredients until smooth
Use medium cookie scoop and drop onto an ungreased cookie sheet
Use a fork to make a crisscross pattern on top of each cookie
Bake 10-15 minutes

    I make this same recipe but I call them 1,2,3 peanut butter cookies as they have 3 ingredients, 1 C. sugar, 1 C. PB, 1 egg. I do not use baking soda.

    Brown sugar makes them more chewy, white sugar makes them more crisp, and splenda makes them crumble.

    I saw this recipe on Paula Deen's show except hers used Splenda and 1 tsp vanilla instead of baking soda so it is okay for diabetics. My mother (diabetic) loves them. - 1/24/08

    Very easy and tasty! I'm always looking for natural healthy wheat-free recipies. Make sure you let the cookies cool before you try to move them. When they're warm they crumble. - 3/29/08
