Ingredients
1.5 lb lean ground beef1 large onion, diced medium3-5 cloves of garlic (to taste), minced 1 large sweet potato, medium dice, with skin1 (15 oz) can low sodium diced tomatoes1 (15 oz) chick peas, rinsed1 large eggplant, diced1-2 tbsp curry powder (to taste)1-2 tbsp pumpkin pie spice3 cups V-8 juice (low sodium) 1/4 cup raisins6 large pieces candied ginger (minced)10 oz sugar snap peas, chopped large1/2 cup marsala wine (or vinegar of your choice)
Directions
1) Brown onions and ground beef in large frying pan.
2) Add other ingredients and bring to a boil.
3) Reduce heat and simmer (covered) for 1 hour (or until potatoes are tender). Remove cover and simmer until desired thickness is achieved.

Makes 12 (1 cup servings @ 308 calories per cup)
