8 hard boiled eggs4 tbs mayonaisseblack pepper1/4 raw onionsprinkle of cayenne pepper
Slice 8 hard boiled eggs in half the long way. scoop out the yolk and add into a separate bowl. Arrange the eggs on a serving tray, hollow facing up.
Meanwhile whip the egg yolks, mayonnaise, and black pepper into a smooth creamy mixture. Grate 1/4 of an onion and add the gratings, not the juice, into the egg yolks and mix well.
With a pastry bag, pipe 1/16 of the mixture into each of the egg halves. Sprinkle the remaining cayenne pepper over the eggs. Chill well and serve.
