Curried chickpeas & potatoes

2 large garlic, minced1 large onion, chopped1 sweet red pepper, chopped2 medium raw potatoes, cubed*5-6 frozen spinach cubes1 Can blue menu chickpeas(no salt)1.5 Tbsp curry.5 Tbsp cumin.5 tsp cinnamon1/2 Tbsp ground ginger1/4 tsp cayenne2 cups water1/2 cup soy milk(Natura unsweetened)1 low sodium broth cube(GoBio low sodium vegetable bouillon cube)*spinach cubes come frozen in little 'pucks', or use approx. 2-3 cups fresh spinach and add at the end, and simmer until wilted.
Saute onion, garlic & red pepper for about 5 minutes. Add spices and saute another couple of minutes, stirring periodically to prevent sticking.
Add water, chickpeas, broth cube & potatoes and simmer about 15 minutes.
Add spinach and soy milk and simmer about 5 minutes until potatoes are soft.
Makes approx. 4 - 1 Cup servings
