Introduction

Number of Servings: 4

Ingredients

    1 cup dried lima beans
    1 cup onions, finely chopped
    1 cup tomatoes, canned, with green chilies
    1 teaspoon olive oil
    1 tablespoon yellow mustard seed
    1 tablespoon coriander, dried
    1 teaspoon curry powder
    1/4 teaspoon salt

Directions

Soak the Lima beans in water for 4-6 hours or overnight
After soaking, cook them until tender and soft(mash-able)
Add olive oil to a nonstick pan
Add the mustard seed and cook a few minutes until they begin to sputter
Add finely cut onions and saute until golden brown
Add tomato paste (with green chilies), beans, and water to cover, and simmer for 15 minutes
Add salt and coriander and cover, cook a few more minutes before serving

You can eat this dish with tortillas, pita bread, rice or just as a side dish..

    What are the odds - that I put beans in a bowl of water overnight - and this recipe was staring at me when i logged in this morning ! *laughs* I figured it was fate - and it was delicious fate at that ! Would make again ! I substituted lima beans for a mixture of beans ! Thanks for sharing !!! - 4/13/08

    I would like tomake this but I'm confused. The ingredient list says canned TOMATOES while the instructions say tomato PASTE. - 4/13/08
