Johnson's Sweet Squash

2 Butternut Squash (approx 7 cups mashed pulp)7 Tablespoons butter or margarine (1 Tblsp for each cup of pulp)1/4 teaspoon salt1/4 teaspoon pepper1/2 teaspoon ground giner6 tsp brown sugar (packed)
makes 14, 1/2 cup servings
Cut and clean 2 butternut sqashes and cut into quarters (or eighths depending on size).
Place sqash in a jelly roll pan with 1/4" water in base of pan. Cover with Aluminum foil and bake at 400 degrees until soft (approx. 45 minutes to 1 hour).
Remove steamed squash from skin and mash (or puree in a food processor).
Add additional ingredients (see list) and blend well.
Serve hot.
