Low Calorie Mini Pumpkin Pie

Ingredients
3/4 cup sugar1 tsp cinnamon1/2 tsp ground ginger1/2 tsp nutmeg1/4 tsp ground cloves12 oz fat free evaporated milk2 eggs15 oz pumpkin18 Vanilla Wafers
Directions
combine dry ingredients

beat eggs in large seperate bowl

add pumpkin and dry ingredients into eggs

gradually add milk

place one vanilla wafer in the bottom of each cupcake liner, and pour pumpkin mix into cupcake tins.

bake at 400 degrees for 10 min then 350 for another 30 mins or until knife comes out clean

let sit for two hours, then refrigerate
