Low-fat Mashed Cauliflower

Ingredients
1 head cauliflower, steamed1/2 c milk (rice, soy, cow, almond)2 T garlic powder1 t black pepper1 T dried parsley2 T shallot salt (or onion salt) - or to taste
Directions
Place ingredients less salt in food processor and puree until smooth. Add salt slowly to make sure it's to your taste.

Makes 4 1/2-cup servings (but with all that nutrition, who'd only want a half cup?!)
