Quinoa salad

Ingredients
2 cups quinoa4 cups vegetable broth2 cups water4 tbs black fig balsamic vinegar1 cup chopped pear2 cups chopped celery8 oz. grap tomatoes, cut in halves1 cup chopped green pepper1 cup chopped unpeeled cucumber
Directions
Bring water and vegetable broth to a simmer, add quinoa and simmer for 15 minutes until liquid is absorbed. Fluff with fork. Chill quinoa. Combine all other ingredients and toss to cover ingredients with vinegar. Add chilled quinoa, toss and serve.
