Coconut Pumpkin Pie - crustless

Ingredients
2 c. cooked pumpkin1/2 c. sugar5 tsp brown sugar1/4 c. egg substitute or 2 egg yolkspinch of salt1/2 T softened butter2 T Nestle Coffee Mate FatFree French Vanilla Creamer or other creamer or evaporated milkFew drops of each of the following: almond, lemon and vanilla extractDash of allspice, cinnamon, nutmeg and clovesStir in : 1/2 c coconut 1/2 c raisens or craisins 1/2 c chopped walnuts a bit of lemon and orange rind
Directions
Mix all together. Pour into pie pan.
Bake at450 for 10 min
Reduce heat to 350 and cook for 30 min. or until firm in center.

Serve with Lite Cool Whip if wanted.
Refridgerate left overs.
