Teriyaki Pork Kabobs

1/2 c low-sodium soy sauce1/4 c water2 T lemon juice1 T vegetable oil2 tsp brown sugar2 garlic cloves, minced1/2 tsp ground ginger1 lb pork tenderloin, cut into 1.25" cubes1 large sweet red pepper, cut into 1.5" pieces
In a bowl, combine the first 7 ingredients. Pour half of the mixture into a large zip-top plastic bag and add pork cubes. Turn to coat, cover, and marinate for 1-4 hours in the fridge. Refridgerate the remaining marinade separately for basting.
Remove pork, drain and discard marinade. On skewers, alternate pork and red pepper. Grill uncovered over medium-hot heat for 3 minutes on each side, basting with reserved marinade. Continue basting and turning kabobs for 4-6 minutes or until meat juices run clear.
