Joy's Italian Meatballs with Orzo

Ingredients
1 pound turkey meatballs1 large onion, chopped1 TBSP olive oil14 oz beef broth1 cup uncooked orzo pasta1 can diced tomatoes4 plum tomatoes, chopped1/2 cup grated parmesan cheese
Directions
Saute onions in olive oil until tender. Add beef broth and bring to a boil. Stir in orzo, meatballs and diced tomatoes. Return to a boil. Cover and reduce heat to medium low. Simmer 7-8 minutes until liquid is reduced, stirring occasionally.
Add plum tomatoes and cook 5-8 minutes until orzo is tender. Stir frequently. Sprinkle with cheese and serve.
