6 tbsp olive oil6 tbsp chili powder3 lb cubed boneless pork chops****2 med onion diced, 4 small pasilla pepper diced 4 cans diced tomatoes with liquid4 cloves garlic finely chopped1 tbsp fresh oregano finely chopped4 cups chicken or beef stock****1 24 oz can white hominy with packing liquid1/2 tsp salt****1 bun fresh cilantro chopped1 bunch green onions choppedSour cream to garnish
Makes 10 1 cup servings
in large stock pot heat 3 tbsp olive oil and toast chili powder until aroma is released
add diced pork and brown until meat is coated with toasted chili powder
add onions, pasilla peppers, garlic and chopped oregano. sautee until onions become a little translucent. Add chicken stock then hominy and diced tomatoes with packing liquids
cover and simmer in crock pot for 2-4 hours
