Black Bean and Sausage Soup

Ingredients
Great Value Black Beans (dry, 32 oz)Low Sodium Chicken Broth, 8 cupsArcher Farms Organic Sweet Apple Chicken Sausage, 5 serving chopedCelery, raw, 1 cup, diced onion, raw, diced, 1.5 cupCarrots, raw, 1.5 cup, choppedOlive Oil, 2 tbspFresh apple- peeled and choppedBrown Rice, 1 cup dry
Directions
Soak beans overnight. Drain and rinse
Begin cooking beans in broth
Season with garlic, salt, pepper, and red pepper flakes to taste
While beans are cooking, saute veggies in olive oil. Add to beans.
Add apple and sausage
Cook for an hour over medium heat. Add water as needed.
An hour before serving, add rice.
