Red Quinoa, Apple & Cranberry Cake w/Homemade Cream Cheese Frosting

Ingredients
1 cup whole wheat flour1 cup cooked red quinoa3/4 cup raw sugar1/2 cup (1 stick) I can't believe it's not butter1 tbsp vanilla extract3 eggs1 tsp baking powder1 large Granny Smith Apple, chopped1 cup dried cranberriesCream Cheese Frosting1 8 oz package cream cheese1/2 cup (1 stick) I can't believe it's not butter1 cup powdered sugar1 tsp vanilla extract
Directions
Preheat oven to 350. Greese a 9 inch pan.

Sift flour and baking powder into medium bowl. In larger bowl, beat together eggs, sugar & vanilla extract until smoth. slowly add the flour mixture in small batches, whisking in between batches to ensure everything is properly incorporated. add the melted butter and combine. Next, add the red quinoa, folding it into the mixture gently. Finally, add the chopped apple and cranberries and mix together well. Fold quinoa into mixture gently. Finally, add chopped apple & cranberries and mix together well. Pour better into cake pan & bake for 35 mins or until center is no longer wet when tested w/toothpick.

To make frosting, combine ingredients w/electric mixer (softened cream cheese, softened butter, sugar, vanilla extract).

When cake is finished baking, remove from oven & cool on a rack for 10-154 mins before removing from pan. Frost.
