Sweet Potato and Chicken Curry

Ingredients
18 oz chicken breast1 large sweet potato, chopped 2 tbs curry powder1/2 large onion, chopped1 green pepper, chopped2 C vegetable broth/stock1/2 C fat free half and half8 tbs mango chutney2 tbs flour
Directions
Chop vegetables and cook on skillet until sweet potatoes are browned.
Add chicken, cook until slightly browned.
Add Curry powder, cook another 2 minutes
Add flour, stir to blend
Add vegetable broth, half and half, and mango chutney
Contiue to cook until sauce thickens, between 10-15 minutes.
Serves 4.
