Cauliflower Soymilk Soup

2 stalks of celery chopped1/2 bell pepper chopped1 medium onion chopped1 tablespoon garlic chopped32 ounces fat free chicken broth3 tablespoons of olive oil1 medium head of cauliflower choppedsalt, pepper, cumin to taste1 cup of soy milk
saute onion, garlic, celery and green pepper in olive oil.
Add chopped cauliflower, cumin, pepper salt and broth. Bring to a boil. Simmer until cauliflower done. Add 1 cup of soymilk. Emulsify with hand blender or put in blender. Serve hot. Makes about 6 1.5 cup servings.
