Chicken with Peanut Curry Yogurt Sauce

Ingredients
1 tablespoon olive oil3 cloves garlic, chopped1 cup chopped onion1 cup chopped red and green bell peppers1 tablespoon curry powder1 tablespoon ginger root1/4 teaspoon red pepper flakes2 teaspoons garam masala1 pound chicken breasts, cut into 1-inch pieces1 cup Greek, non-fat yogurt1/2 cup natural peanut butter
Directions
1. Heat the oil in a large skillet over medium heat. Add the garlic, ginger, onions and bell pepper, cooking just until tender. Stir in the curry powder and pepper flakes. Cook 1 minute.
2. Season the chicken with garam masala, add it to the skillet. Cook and stir until browned. Combine yogurt and peanut butter. Stir into skillet, simmering until sauce is hot.
3. Season dish to taste with additional salt and pepper, if needed. Serve with cooked rice or couscous.
