Saag paneer

* Canola Oil, 2 tbsp * Cumin seed, 1 tsp * Onions, raw, 1 medium (2-1/2" dia), chopped * Ginger Root, 2 tsp, minced * Garlic, 2 cloves, minced * Pureed Tomatoes, 1 cup * Chickpea Flour (Garbanzo Bean Flour), .125 cup * Swiss Chard, 450 grams, steamed and chopped * Garam Masala, 1 tsp * Cumin powder, 1 tsp * Coriander powder, 1 tsp * Paneer, fresh, 8 oz * Salt to taste
Heat 1 tbspn of oil in a non-stick skillet. Slice the block of paneer into 2 slices horizontally. Brown on both sides. Set aside to cool.
Heat the other tbspn of oil. Add cumin seed. When fragrant, add the onions, garlic and ginger and saute till brown and caramelized. Sprinkle the chickpea flour, the cumin and coriander powders and saute for a minute. Add tomatoes and salt and cook till tomatoes are cooked. Add the cooked swiss chard and cover and cook over low heat.
Dice the paneer into 64 cubes and add to the vegetables. Cover and heat through. Serve hot.
