Double Delicious Protein packed grilled cheese

Bean Dip:1 cup canned white beans, drained and rinsed2 tsp lemon juice1/4 cup low fat cottage cheese, or part-skim ricotta1 tsp olive oil1/2 clove garlic, rough chop1/4 tsp salt1/8 tsp pepperSandwich: 8 tbsp bean dip8 tbsp shredded part-skim mozzarella cheese4 slices whole wheat bread
Put bean dip ingredients in mini food processor and blend until smooth.
Toast bread lightly
Spread 2 tbsp dip on each slice of bread
Top with 2 tbsp shredded cheese.
Place in toaster oven or under broiler and toast until cheese is melted and bubbly.
Makes 4 servings. Any extra dip can be stored up to 1 week in fridge.
