yummy egg white veggie omelette

Ingredients
4 Egg Whites1/4 cup diced tomatos1/4 cup chopped onions1/2 cup of fresh spinach1 slice of any low fat/fat free cheese
Directions
separate egg whites from yolks. Discard the yolks. Mix up egg whites with a pinch of Fat free milk. put to the side.

In the meantime, chop up all your veggies.

In a small skillet pan, spray lightly with non stick spray. Turn heat on to med/low.

Add onions and tomatos. Heat those up for a bit.

Pour in the egg mixture to the skillet. Let the omelette cook.

Right before you are ready to fold your omelette, add the fresh spinach.

Fold omelette in half in the pan. Let cook on both sides...so yes, you are going to have to try to flip it over! the best way to do this is to cook one side, then slide it off onto a plate and flip it back into the pan on the other side of the omelette.

Place the cheese on top of the omelette just so it can melt.

you will have yourself a yummy, guilt free, filling omelette!
