Turkey Wraps With Herbed White Bean Spread

1 1/2 cup Progresso Cannellini Beans, canned3 T Olive Oil1/2 T Lemon juice1 small garlic clove1 tsp fresh ThymePinch Kosher salt1/4 tsp Pepper4-8 tortillas (depending on size)3/4 lb thinly sliced turkey breast1 large ripe tomato1/4 medium red onion, thinly sliced2 oz shaved Provolone or Parmigiano-Reggiano cheese1 cup Arugula or baby spinach leaves optional
Combine beans, oil, juice, garlic, thyme, salt, and pepper in the bowl of a food processor. Puree until smooth, stopping to scrape down sides. (can be made and chilled up to two days ahead)
Spread bean spread on one side of each torilla, leaving an inch border around the edge. Arrange turkey down the center of each torilla, layer with onion, tomato, cheese, and arugula. Starting at one end, tightly roll each tortilla. Serve with chips if desire, and, if using large tortillas, cut crosswise in half.
