lentil and curry casserole

Ingredients
1 C cubed Yam/Sweet Potato (peeled)1/3 cup dried lentils1/4 cup of whole grain rice1/4 shredded carrots1/4 chopped scallions1/4 cup raisens1 1/4 cup chicken broth1T low sodium soy sauce1T Curry Powder1/4 cup cashew nuts chopped
Directions
mix all ingredients in a non stick casserole. Bake at 375 for one hour or more until rice and lentils are cooked. sprinkle cashews over top for flare and flavor
