Apple Fritter

Ingredients
1/2 medium apple 2 jumbo eggs sprinkle of cinnamon2 slices rice bread (regular bread may be used if gluten isn't an issue)
Directions
Makes 1 serving.

Whisk eggs in a bowl. Break rice bread into pieces and drop into raw egg. Peel apple and use 1/2 chopped in small pieces or sliced thin. Sprinkle with cinnamon. Mix well and brown on griddle. Serve with butter spread and a drizzle of honey if desired.
