3 c roasted peppers10 cups fresh eggplant1/4 cup olive oil1 oz. lemon juice salt and pepper to taste
Peel and cut up eggplant. Coat eggplant with olive oil and roast in oven at 375 degrees for 30minutes or until done. add remaining and blend or put in food processor til desired consistinty
