Turkey burger curry with rice

1 cup dry rice2 cup water (or 1 cup chicken broth and 1 cup water)1/2 cup frozen peas1 Tbs (or more) cumin powder1/4 lb lean ground turky2 apples cored, peeled and cut into 1/2 cubes (rough chop) (save the eels for a snack)1 small onion chopped1 Tbs (or more) yellow curry1-2 Tbs olive oil1/2 cup chicken broth1 Tbs lemon juice2 cloves garlic peeled and choppedpepper and garlic powder to taste
makes 2 generous servings
bring rice and water to a boil, reduce to low simmer. When about half of the water is absorbed, add the frozen peas. Add cumin just before the rice finishes cooking.
while rice is cooking:
chop onion and core and peel the apples
brown turkey in olive oil
add onions and apples cook until apples begin to brown and onions are translucent
stir frequently
just before onions and apples are done add garlic
add pepper
add broth, lemon juice and curry
reduce to simmer
stirring frequently until liquid is reduced by at least half
server over rice and peas mixture
