Lemon chicken and rice

Ingredients
1 lb boneless skinless chicken breasts, cut into strips1 medium onion, chopped1 large carrot, thinly sliced2 garlic cloves, minced2 tbls butter1 tbls cornstarch1 can (14-1/2 oz) chicken broth2 tbls lemon juice1/2 tsp salt1 1/2 cups uncooked instant rice1 cup frozen peas
Directions
In a skillet, cook chicken, onion and garlic in butter for 5-7 minutes or until chicken is no lnger pink. in a bowl, combine cornstarch, broth and lemon juice until smooth. Add to skillet, bring to a boil. cook and stir for 2 minutes or until thickened. Stir in rice and peas. Remove from heat; cover and let stand for 5 minutes.
