garbanzo bean patty

Ingredients
* *Bob's Red Mill Garbanzo Bean Flour, 1.75 cup * Collards, 2 cup, chopped (I use frozen greens) * Butternut Squash, 2 cup, cubes cooked+mashed * Cilantro, raw, 4 tbsp * Scallions, raw, 4 medium (4-1/8" long) * water, 1+ cups to desired thickness of batterseason with salt, pepper, cayenne, turmeric, and cumin to taste
Directions
Mix all ingredients to a thick batter.

drop 1/4 cup full on to very lightly oiled pan (I use spray oil)

fry until golden on both sides and then place in a 350 oven and bake for an additional 15 minutes

these freeze nicely

makes 17 small patties, 1 patty = 1 serving
