Pork Meat (preferably with bones in) 3-4 poundsChicken Broth 6 cupsHominy 2-30ounce cansDried Pinto Beans 1-2 cups to tasteOregano 1 tsp.Dried chile peppers (4-6 inches long) 3-4 to tasteGarlic 5 clovesOnions 2 cups choppedSalt and pepper to taste
Soften 3-4 dried mild red chiles in boiling water. Remove the stems and seeds. Blend in a food processor with the softening liquid, garlic, and enough water to make a smooth paste until finely ground. Cook all ingredients together skimming any foam that may arise. Check to make sure the beans are tender. This tastes better cooked with any bones that are in the meat.
