Ingredients
1 cup pasta1 cup dry white beans rinsed 3 cloves garlic, peeled1 cup celery sliced1/2 onion chopped1/2 cup fresh parsley1/4 cup olive oil
Directions
Fill large heavy pot with water and add beans and garlic. Bring to a boil and then allow to cook until skins on beans split. About an hour. Add celery, onion, parsley and olive oil and salt and pepper to taste. Cover and simmer for 1 1/2 hrs, adding water if needed. Add pasta and cook until done - around 8-10 minutes.
Makes 6 servings and is great on a rainy day.
