Chicken Taco Soup (w/ red beans)

1 bell pepper, chopped1/2 med onion, chopped3 cloves of garlic, minced1 cup cooked red beans (made from dried beans, not canned)1 can (14.5 oz) of diced tomatoes, zesty chili style1 cup of shredded chicken6 cups water or broth1 tsp salt1/2 tsp ground cumin1/4 tsp chili powder1/4 tsp smoked paprika
Saute onion, pepper and garlic until soft. Stir in the can of tomatoes, beans, chicken and water. Add seasonings (you can add a packet of taco seasoning, instead of the individual spices).
Simmer for about 30 minutes. Makes 6 servings.
