California Medley Cheesy Potato Soup

Ingredients
3 Medium size yukon gold potatoes1 medium yellow onion2 medium carrots1 stalk celery6 chicken Boullion Cubes2 Cans Condensed Cream of Chicken Soup1/2 Block Velveta Cheese1 16oz Bag of California Medley Veggies from Aldi's(Cauliflower, Broccoli, Carrots)1 1/2 cups water1 tblspoon olive oil
Directions
Chop carrots, celery, onion, potatoes (I used the springy pampered chef chopper thing)
Saute above veggies oil in olive oil for a few minutes to soften a bit.
Add Water, chicken boullion, cream of chicken soup, velveta and frozen california medley mix.
Either heat through on stove or transfer to crockpot and go for a winter bike ride.
