Chickpea Cutlets (Veganomicon)

1 cup cooked chickpeas, no salt added2 tablespoons olive oil1/2 cup vital wheat gluten flour1/2 cup plain bread crumbs (I use whole foods 365 brand)1/4 cup water or vegetable broth2 tablespoons low-sodium soy sauce2 cloves garlic, pressed 1/ teaspoon lemon zest1/2 teaspoon dried thyme1/2 teaspoon Hungarian paprika1/4 teaspoon dried rubbed sageOlive oil for panfrying
Mash chickpeas in olive oil in a mixing bowl until no whole chickpeas are left. Add the remaining ingredients and knead for 3 min or until strings of gluten have formed. Shape dough into 4 cutlets and pan fry over medium high heat for 6-7 minutes on each side.

Awesome recipe. Easy and fast. The cutlets are filling and have a nice texture. I topped them with a simple marinara and served with a tomato mozz salad - perfect! I could see using these cutlets as the basis for many other recipes (casseroles, on top of a salad, as part of a hearty brunch). - 10/8/12

Delicious! Didn't add the lemon zest, exchanges Bragg's liquid aminos for the soy sauce and used WW bread crumbs as well as WW flour and even added in some fresh green onion. I also only panfried them for a few minutes each side then baked them for about 20 min...yum! So many combinations!!!! - 4/27/12
