Whole Wheat Lasagne with Spinach and Cottage Cheese

Ingredients
*Healthy Harvest Whole Wheat Blend Lasagna - 9 noodlesGround beef, extra lean, 1lbsBlue Menu Mushroom & Garlic Pasta Sauce, 1 JarAylmer Accents Spicy Red Pepper Diced Tomatoes, 540ml canCottage Cheese, 1% Milkfat, 750 gram containerMozzarella Cheese, whole milk, 1.5 cup, shredded Parmesan Cheese, shredded, 2 tbsp Egg, fresh, 2 large Spinach, frozen, 1 package (10oz)1/2 tsp each salt and pepper
Directions
Heat oven to 350F. Brown beef and drain. Prepare noodles as box instructions. Add pasta sauce and diced tomatoes; simmer for 10 min. In a seperate bowl stir cottage cheese, spinach (thawed), parmesan cheese, half the mozzarella eggs (beaten), and salt and pepper. Layer 1/4 meat sauce, noodles, 1/4 meat sauce, 1/2 cheese mixture, noodles and repeat. after all noodles are used top with remaining meat sauce and remaining mozzarella cheese. Cover with foil. Bake for 50 min, uncover and bake for 10 more minutes. let stand 10 min before cutting. Serves 12.
