Turkey Meatloaf - Real Simple Recipe (Feb 2009)

1.5 pounds lean ground turkey (I use turkey breast)1 onion, chopped (finely)1 bunch fresh spinach finely chopped(about 4 cups)1 cup flat-leaf parsely, finely chopped1/2 cup whole-wheat bread crumbs (about 1 slice crumbled)2 tbsp dijon mustard1 large egg whitekosher salt and black pepper1/4 cup ketchup
Heat oven to 400 Degrees F.
In a bowl, combine turkey, onion, spinach, parsely, bread crumbs, mustard, egg white, and 1/2 teaspoon each salt and pepper.
Transfer the mixture to a baking sheet and form it into a 10-inch loaf (I use a 9 inch round cake pan). Spread with ketchup. Bake until cooked through, 45-50 minutes.
