Hearty Harvest and Ham Stew

Ingredients
1 tbsp. olive oil1 sweet onion, chopped2 cloves garlic, chopped1 lb. ham steak, chopped (or any ham, chopped up)1/2 medium head cabbage, chopped2-3 potatoes, sliced thick (I shredded mine)3 carrots, chopped1/2 tsp. paprikasalt and black pepper to taste3 cups firmly packed spinach (or chard, beet tops, etc.) I also chopped these up rather fine
Directions
Warm olive oil in a large pot over medium heat. Stir in onions and cook until tender, about 3 minutes. Stir in the garlic and ham, cook for another 2 minutes. Stir in the chopped cabbage and water. Cover and simmer for 10 minutes.

Stir in potatoes, carrots and spices. Cover and simmer 10-12 minutes.

Reduce the heat to medium low, stir in the greens, adjust seasonings if needed and cook for 10 minutes. Serve with bread (we opted out of the bread and added just a bit of colby jack cheese instead).

**I put all the ingredients that needed to be chopped in the food processor. I have small kids who find large chunks in soup to be "icky", so this made for a nice, mostly uniform size-chunk stew that was easy to eat for them.**
