1.5 cup fresh or canned tomatoes2 medium onions1 large red pepper2 small hot peppers6 cloves of garlic2 small zucchinis5 medium-sized mushrooms1.5 cup of Italian parsley1 cup dry barley3 cup cooked or canned garbanzo beans3 cup cooked or canned red kidney beans1/2 cup sunflower oil1 1/2 cup waterspice and salt to taste
If using dry beans - soak overnight and cook first
Chop up veggies. Put veggies, barley, beans, tomatoes, oil, water and spices in slow-cooker. Cook on high for 4 hours.
Makes six meal-sized servings.
