Apple Raisin Bran Muffins

Ingredients
1/4 cup unsweetened applesauce1.5 cups shredded apples1/4 cup honey2 1/2 cups whole wheat flour1 1/2 cups raisin bran2 large eggs1 tsp baking soda1 1/2 tsp baking powder1 tsp. cinnamon or baking spice1 tsp. vanilla
Directions
In a large bowl combine the applesauce, eggs, raisin bran, and honey and let it soak for 10 minutes. After it soaks add the shredded apples (you can also add walnuts but they aren't calculated in the nutrition information)

In a small bowl combine the flour, baking soda, baking powder, and cinnamon. Add to the wet ingredients and add the vanilla, combine until just moistened. Put into 20 muffin cups and bake at 350 for 18 minutes or until a toothpick inserted comes out clean.
