White Chicken Chili

Ingredients
1 T canola oil1 lb boneless, skinless chicken breast, cubed4 tsp chili powder2 tsp ground cumin1c chopped onion3/4c chopped green bell pepper1 can (10 3/4oz) reduced fat cream of chicken soup3/4 c water1 1/2c whole kernel corn, frozen2 cans ( about 15oz each) cannellini beans, rinsed and drained
Directions
Heat oil in 4-quart saucepan over medium high heat. Add chicken, chili powder, cumin, onion and pepper and cook until chicken is cooked through and vegetables are tender.

Stir in soup, water, corn and beans and heat to a boil. Reduce heat to low. Cover and cook 5 minutes, stirring occaisionally.

Serves 6 (about 1 1/2 cup each)
