Garbanzo Bean and Tuna Salad with Lemon

3 tablespoons low-fat mayonnaise1 1/2 tablespoons Dijon mustard1 teaspoon grated lemon peel1 6-ounce can solid white tuna in spring water, drained2 tablespoons fresh lemon juice1 15- to 16-ounce can garbanzo beans (chickpeas), rinsed, drained1/2 cup chopped sweet onion (i.e. vidalia - cut in 1/2 if using regular onions)1 Tbsp capers1/2 cup chopped fresh Italian parsley
Whisk together mayonnaise, mustard, lemon juice and lemon peel. In a separate bowl, combine tuna, garbonzo beans, chopped onion, capers and parsley. Add dressing to tuna mixture and mix well. Serve over a bed of greens for a light lunch or health afternoon snack.
