Introduction

Feta, watermelon and mint are a perfect appetizer for warm-weather gatherings. Feta, watermelon and mint are a perfect appetizer for warm-weather gatherings.

Ingredients

    3 cups watermelon cubes
    1/2 cup mint leaves
    12 ounces reduced-fat feta, cubed
    salt and pepper

    12 wooden or bamboo skewers

Tips

Change it up: Swap chunks of heirloom tomatoes for the melon or basil for the mint.


Directions

Place one cube of watermelon on each skewer, then 2-3 mint leaves, 1 cube feta and a second watermelon cube.
Season with salt and pepper.
Refrigerate or serve immediately.

If desired, drizzle with balsamic vinegar and/or olive oil.

Serving Size: 12 skewers; 1 per serving
